Circa 1976 Anil decided that the Hotel and Restaurant Industry
was his calling, he joined the Institute of Hotel Management
Catering and Nutrition in New Delhi, India and graduated in
1979 with distinction in Food & Beverage Service.
For the next 11 years he worked at Several Five Star Deluxe
hotels around the world, including the illustrious St. Francis
Hotel in San Francisco, CA. Anil has since pursued a career
in Real Estate as well. In 1999 he moved to Santa Rosa and
planted a Pinot Noir vineyard in Southwest Santa Rosa, this
is now in the prestigious Russian River appellation, in collaboration
with his peers he makes some outstanding wine as well.
True to his calling Anil decided to open an upscale Indian
restaurant in Santa Rosa, the heart of the Sonoma wine country,
not only does the Kabab and Curry House offer classic Indian
Cuisine, but an exceptional Wine list and food pairings. It
is Anil’s goal to be the best rated Host in the North
Bay, given his past track record he will get there very soon!
Spices and Indian Cooking
Whenever someone thinks of Indian spices, curry often comes
to mind. Indian cuisine is well known for its creative use
of spices. A typical Indian dish uses a variety of spices
to add a subtle aroma and flavor to the recipe that appeal
to the senses. Using more than 10 different spices in a given
recipe is not considered excessive.
Spices may be used ground or whole, fried or roasted, dried
or paste, at the end or in the beginning of the cooking, alone
or in various combinations. “Masala” is the Hindi
word for spice. When a combination of spices, herbs and other
condiments are ground together it is also called “masala”
and is as a marinade or sauteed in oil before adding the main
vegetable and or meat so that the delicate flavors of the
spices are released in the recipe. The spices used most often
throughout India are Turmeric, Cumin, Black Pepper, Mustard
Seeds, Cardamon, Cloves, Fennel Seeds, Ginger, Garlic and
Chilies.
